Old-Fashioned Chocolate Cake
Yields 1, 8-inch Round, 2-Layer Cake
Total Time: 45 Min + Baking Time

Ingredients:

  • 1/2 Cup Unsweetened Cocoa Powder
  • 3/4 Cup Vegetable Oil
  • 1 Tablespoon Instant Coffee Granules
  • 1 Teaspoon Salt
  • 1 Teaspoon Vanilla Extract
  • 2 Cups Granulated Sugar
  • 2 Cups Hot Water
  • 3 Cups All-Purpose Flour
  • 2 Tablespoons Distilled White Vinegar
  • 2 Teaspoons Baking Soda

Pre-Preparation:

  1. Lay out all ingredients/equipment 15 minutes prior to cooking/baking.
  2. SIFT Flour, Baking Soda, & Salt together to create a "FBS&S Mixture" "Flour, Baking Soda, & Salt)

Directions:

  1. Preheat oven to 350oF, with middle oven rack in the center of oven.
  2. Spray your 8-inch round cake pans.
  3. In your large mixing bowl, whisk together your FBS&S Mixture.
  4. In your large measuring cup, combine water, oil, vinegar, instant coffee, and vanilla.
  5. Add and whisk mixing cup mixture into your dry ingredients in your large mixing bowl until combined-a few lumps are ok.
  6. In your 8-inch round cake pans, divide your cake batter between each pan.
  7. Place pans in oven for 35-45 minutes or until butter knife comes out clean. Please Note Oven temperatures vary, so check cake approx. 5 Minutes before previously suggested.
  8. While the cakes are baking, get two ceramic dinner plates out. Line ONE with about two paper towels to place one of your cake one rounds on after baking and set aside. (This paper towel lined plate will hold the top round for your layer cake. It does not matter which round you put on this plate. Just know the cake round you invert onto the bare plate will be your bottom layer and be frosted first.) Once cakes are done baking, remove cakes from oven and place on stove to cool for 15 minutes.
  9. Once 15 minutes are up, gently invert cakes out of pans onto your ceramic dinner plates, cover with a couple paper towels and allow to THOROUGHLY cool for approximately 2-4 hours.
  10. Once cake has cooled, invert the paper towel lined cake round between two ceramic dinner plates so you have one flat bottom facing up and one flat bottom facing down. This will aid in stacking your layer cake and avoid your cake sliding once frosted.
  11. Refer to the Glossy Chocolate Frosting. Then store cake in 10-inch round cake taker.
