Strawberry Cake

Ingredients:

  • 1, 0.6 Ounce Box of Sugar-Free, Strawberry JELL-O (Just the gelatin powder)
  • 1 Box White Cake Mix (made as directions indicate)
  • 1 Teaspoon All-Purpose Flour (to allow cake to rise more)

Equipment:

  • Measuring Cups
  • Long Handle Wooden Spoon
  • Measuring Spoons
  • Oven
  • Stand or Hand Mixer
  • Large Mixing Bowl
  • Batter Spatula
  • Baker?s Joy Baking Spray
  • 2 Ceramic Dinner Plates
  • 10-inch Round Cake Taker
  • Paper Towels
  • 2, 8-inch Round Cake Pans

Pre-Preparation:

  1. Lay out all ingredients/equipment 15 minutes prior to cooking/baking.

Directions:

  1. Preheat oven to the temperature indicated on your box of cake mix.
  2. Spray your 2, 8-inch round cake pans with baker's joy baking spray.
  3. In your large mixing bowl using a stand or a hand mixer, combine all ingredients for your white cake mix as you normally would to make a box cake according to the directions on the box. This will be the base cake batter for your Strawberry Cake
  4. Add into your cake batter base, just the contents of the gelatin package and your teaspoon of all purpose flour. The flour is added to add a slight bit more rise to your cake.
  5. Once all ingredients are well mixed, proceed to step 6.
  6. Pour your batter into your prepared cake round pans.
  7. Bake for the time indicated on your box of cake mix.
  8. While the cakes are baking, get two ceramic dinner plates out. Line ONE with about two paper towels to place one of your cake one rounds on after baking and set aside. (This paper towel lined plate will hold the top round for your layer cake. It does not matter which round you put on this plate. Just know the cake round you invert onto the bare plate will be your bottom layer and be frosted first.)
  9. Once cakes are done baking, remove cakes from oven and place on stove to cool for 15 minutes.
  10. Once 15 minutes are up, gently invert cakes out of pans onto your ceramic dinner plates, cover with a couple paper towels and allow to THOROUGHLY cool for approximately 2-4 hours.
  11. Once cake has cooled, invert the paper towel lined cake round between two ceramic dinner plates so you have one flat bottom facing up and one flat bottom facing down. This will aid in stacking your layer cake and avoid your cake sliding once frosted.
  12. Refer to Strawberry Frosting.
  13. Once your frosting is made, apply it to the top of the flat bottom facing up cake.
  14. Then once you have a thick top of frosting on this cake with both hands pick up the other cake round and set it on the one you just frosted then frost the whole cake.
  15. When done, place the whole cake in a 10-inch round cake taker for storage.
