
Sweet Potato Casserole

Ingredients:
Casserole Ingredients:
- 1/2 Cup Granulated Sugar
- 1/2 Cup Light Brown Sugar
- 1/2 Stick Butter (Melted) or 1/4 Cup Butter (Melted)
- 1 Cup Milk (Whole or Canned)
- 2 Eggs
- 5 Potatoes (cooked, peeled and mashed)
Bake-On Topping Ingredients:
- 1 Cup Coarsely Chopped Pecan Nuts Sugar (Depending on how sweet you want it)
- 1 Cup OR 1/2 Cup OR 3/4 Cup Light Brown
- 2 Tablespoons All-Purpose Flour
After-Baking Topping Ingredients:
- Half a Bag of Miniature Marshmallows
Equipment:
- 2 Quart Casserole Dish
- Cookie Sheet
- Large Mixing Bowl
- Long Handle Wooden Spoon
- Measuring Cups
- Measuring Spoons
- Oven
- PAM Non-Stick Cooking Spray
- Potato Masher
- Small Mixing Bowl
- Stand/Hand Mixer
Pre-Preparation:
- Lay out all ingredients/equipment 15 minutes prior to cooking/baking.
- Bake your Sweet Potatoes. See Baked Sweet Potatoes.
Directions:
- Preheat oven to 350oF.
- Add your Baked Sweet Potatoes to your large mixing bowl and using your potato masher mash the potatoes.
- Next, mix in your Butter, Granulated Sugar, Light Brown Sugar, Milk, Eggs,& Vanilla.
- Pour mixture into small casserole dish
- In a small bowl mix together your Bake-On Topping ingredients and sprinkle over the top of your casserole.
- Bake for 40-45 Minutes.
- Remove casserole from oven
- Apply After-Baking Topping over casserole
- Bake for an additional 5-10 minutes.
